Fairmont Waterfront Dry January Menu: Seedlip Spirit-Free Cocktails in Vancouver

This January, Fairmont Waterfront is embracing mindful drinking with a new spirit-free cocktail menu created in partnership with Seedlip, the world’s first distilled non-alcoholic spirit during Fairmont Waterfront Dry January.

Running throughout the month, the collaboration is part of a nationwide initiative across Fairmont properties in Canada, inviting guests to explore elevated, alcohol-free cocktails designed to support a more intentional start to the year—without sacrificing flavour, ritual, or experience.

Rebecca Coleman, who sometimes imbibes and sometimes doesn’t, and whose palate is most certainly trust-worthy, joined me for this Mindful January tasting, and we agreed the Clarity cocktail was our top pick, even though all three drinks hit very different taste profiles.

A More Thoughtful Way to Toast Dry January

Founded by Ben Branson and inspired by 300-year-old herbal remedy recipes, Seedlip has helped redefine the non-alcoholic category. Instead of sugary substitutes, Seedlip focuses on complex botanicals and balance—making it a natural fit for Fairmont Waterfront’s culinary-driven hospitality.

While you are there we highly recommend the Mezze Spreads with marinated olives and and hummus, tzatziki, red pepper feta, served with grilled pita and lavosh bread and Fried Cauliflower tossed with a honey chili sauce and finished with spiced pumpkin seeds. Our favourite might have been the Crispy Oyster Mushrooms, another shareable bite on ARC’s menu, served with leeks, a lemon wedge, and vegan chipotle aioli — earthy and crunchy with a hint of smoky heat  The Salt Spring Island Mussels with creamy harissa wine sauce, cilantro, grilled baguette were a close second.

    • Warmth – Seedlip Spice 94 with apple, mango chai lemonade, cinnamon, and ginger

    • Reset Flight – A tasting flight featuring all three cocktails
