Fraîche Restaurant Welcomes Rising Culinary Talent to West Vancouver Dining Scene

One of West Vancouver’s most popular dining rooms is about to get a new infusion of flavour from up-and-coming chef, Jefferson Alvarez.  Following outstanding reviews of his menus at Divino Wine Bar in Vancouver magazine, Nuvo magazine and the Globe and Mail, Alvarez has packed up his knives and headed to the hills of West Vancouver to share his magic with a new audience.

Chef Alvarez spent  a year and a half wowing diners at his most recent post, Commercial Drive’s Divino, earning fans like top Vancouver food critic, Alexandra Gill who wrote, “it was the type of meal that a restaurant critic dreams about.”

A big proponent of keeping things fresh and inspired, Alvarez is extremely excited about his move to Fraîche and is looking forward  to spreading his wings, from the gorgeous open kitchen through to the elegant dining room.  A huge wine fan himself, Alvarez’s commitment to food and wine pairings will also serve him well in his new role.

The Venezuela born chef has a diverse and exciting resumé having studied and worked with such notable chefs as Anthony Walsh, Claudio Aprile, Masaharu Morimoto and Douglas Rodrigues.  He has been especially inspired by the unique offerings of Toronto’s Susur Lee and maintains his fresh culinary take by revisiting his global explorations.  Spain, in particular –  his most recent and frequent destination – holds a delicious fascination thanks to his experience working with molecular gastronomy, charcuterie and original tapas style food.

Like many of his peers, Alvarez believes in using the best ingredients available; he adds his own signature twist by sourcing unusual and unique ingredients such as sea urchin and Elder berry, and using a range of techniques acquired through his many years of working in kitchens around the world absorbing an array of cooking styles.

“I cook from the heart and there is no limit on what I want to create,” says Alvarez.  “Fraîche restaurant is very inspiring to me on many levels.  I can’t wait to impress regulars and guests with my take on Fraîche’s signature dishes and flavours while adding some of my own  to the mix.”

Chef Alvarez’s has become well known for his always-changing ‘Chef’s Tasting Menus.’  Once settled in, he will begin sharing these inviting and approachable menus, described by Alvarez as “never the same, always exciting,” with guests from near and far.

Alvarez takes over the absence left by Chef Dino Renaerts who’s talent and passion were greatly appreciated by Fraîche’s guests and staff.  Owners Paul Chalmers and Barb Inglis thank Renaerts for all he has brought to Fraîche and wish him well as he departs for future endeavours.
