Chef Carkner to Lead Culinary Team at Globe@YVR and Jetside Bar

The Fairmont Vancouver Airport is pleased to announce Geoff Carkner has joined the hotel as Executive Chef and will lead the culinary team for the award-winning Globe@YVR restaurant and Jetside Bar. This is a particularly exciting time for Carkner to join the team, as the hotel was recently awarded “Best Airport Hotel – North America” and fifth best airport hotel in the world at the World Airport Awards 2011.

Carkner began his culinary career at the Renaissance Vancouver Harbourside in 1997 and later went to join the opening team at the Delta Pinnacle. Since then, he has worked at several properties in Australia and most recently joined Fairmont in 2008 as Executive Sous Chef at The Fairmont Hotel Vancouver. Carkner believes that “Classics are classics for a reason – the flavours work,” but likes to put a modern spin on his dishes, playing with textures and presentation. He is excited to lead Globe@YVR’s culinary team and build upon programs such as the popular “Garden to Globe” menus that feature local ingredients harvested from the hotel’s Terra Nova community garden plot, the hotel’s honey program, and “Growing Chefs” that teaches children about urban agriculture.

“I’m thrilled to join such an innovative hotel that is so involved in the local community and environs,” said Carkner. “I can show off British Columbia’s bounty to our guests, taken directly from our garden plot just six kilometers away, use natural honey from our honeybee apiary at McDonald Beach Park and work with an enthusiastic team who participate in great community programs like Growing Chefs.”

Globe@YVR, the hotel’s 165-seat signature restaurant, is a plane spotter’s paradise. Floor-to-ceiling windows and towering stone fireplaces provide the perfect setting for gazing at the activity on the runways or the spectacular views of Vancouver’s North Shore mountains. Terra Nova Rural Garden – Garden to Globe Menus (Summer 2011)

The Fairmont Vancouver Airport maintains a garden plot at the Terra Nova community garden (approximately six kilometers from the hotel). The hotel acquired two plots in 2009 and launched “Garden to Globe” feature menus using produce from the garden in July 2010. Sample items harvested from the garden include: Thumbelina carrots, lemon cucumber, breakfast radishes, fingerling potatoes, Jerusalem artichokes, bush beans, fava beans, snap peas, Brussels sprouts, garlic, cabbage and broccoli. This year, the hotel plans to grow herbs and edible flowers as well.
