Checking In With Chef Andrea Carlson Before Victoria’s Culinary Championships
Tell us a little bit about your restaurant and/or style of cooking.
Burdock & Co seeks inspiration from British Columbia’s tangle of islands and coastlines, sourcing ingredients from local growers, farmers and foragers and presenting them in a fluid culinary experience. In May 2013, Andrea Carlson opened her cozy neighbourhood eatery at the East End of bohemian Main Street. Her farm-to-table philosophy intrigued and enchanted diners, and the restaurant soon earned a reputation as a pioneer of naturalist food and drink. Now, Burdock & Co is recognized citywide as a welcoming haven that encourages patrons to slow down, connect and linger over a shared meal.
Burdock & Co’s vegetable-forward menu brings raw materials to the forefront and changes frequently to reflect seasonal availability. Rustic, nourishing and elegant, the menu features small plates that encourage sharing between friends, or all to one’s own. Effortlessly aesthetic, each dish is crafted with a refined technique that shines a spotlight on the region’s natural bounty of sustainable seafood, organic vegetables, ethically raised meats and fresh dairy. Whether a lazy brunch, multi-course dinner or celebratory dessert, Burdock & Co’s playful yet approachable fare is guaranteed to have diners returning to savor more.
