Karen Gin, chef de cuisine for MARKET by Jean-Georges has introduced a new Jean-Georges concept to Vancouver’s MARKET. “Simply Cooked” is the new menu heading which offers a choice of fish or meat which is prepared simply – pepper and salt as the only seasoning – and then Market cooked with a side of Shisito peppers and citrus-chili emulsion.
“Simply cooked is letting the ingredient speak for itself,” said Gin. “It’s perfect for Vancouver where we have such amazing products, and this approach is giving us a chance to interact even more directly with the fish suppliers and farmers”.
Choices include Qualicum Beach scallops, Arctic char, Queen Charlotte sablefish, Nova Scotia lobster, lamb Chops and Alberta AAA beef tenderloin, with prices ranging from $15 to $19 at lunch, and $21 to $34 at dinner. Diners can add side dishes such as the grilled brocolinni with parmesan cheese and olive oil, warm baby beets with balsamic vinegar or truffled mash potatoes.
MARKET by Jean-Georges is the first restaurant in Canada for the three-star Michelin chef Jean-Georges Vongerichten and the signature restaurant of Shangri-La Hotel, Vancouver. MARKET, open seven days a week from breakfast through dinner, is located on the hotel’s third floor and accessible through the hotel or directly off Alberni Street.
