Les Faux Bourgeois Begins a New Chapter with Refreshed Space, New Menu and New Leadership

Vancouver’s beloved Fraserhood French bistro has reopened following a refresh, with an official relaunch celebration set for July 8.

One of Vancouver’s favourite neighbourhood restaurants is entering a new era.

Les Faux Bourgeois has officially reopened after a refresh that includes an updated dining room, a reimagined menu and new leadership, while keeping the approachable French bistro experience that has made it a local institution for years.

The Fraserhood favourite quietly welcomed guests back during a soft opening on June 26, giving diners an early taste of what’s to come before its official relaunch on July 8.

The restaurant is now operated by Gaia House, the hospitality group behind Nammos Estiatorio, Selene Aegean Bistro and AMA. While there are plenty of changes behind the scenes, longtime guests will still find familiar faces. Original founder Andreas Seppelt remains part of the front-of-house team, continuing the warm hospitality that helped build Les Faux Bourgeois’ loyal following.

Leading daily operations is new general manager Georgio Yacoub, whose résumé includes AnnaLena, ELEM and Burdock & Co. In the kitchen, co-chefs David Cassese and Brent Thornton have refreshed the menu with an emphasis on hyper-local ingredients and dishes designed for sharing.

Fans of the restaurant will be pleased to see several signature dishes remain, while new additions bring fresh energy to the menu.

A new Raw Bar introduces seafood-focused starters, including torched prawns served with a spicy Clamato dressing and king salmon paired with a wild herb sauce. Returning classics such as Escargot en Cocotte and Beef Tartare are joined by newcomers including Oeuf Mayonnaise topped with trout roe and white anchovy.

For mains, diners can expect French bistro staples including Steak Frites finished with sauce au poivre, Duck Bordelaise served with crisp pomme pavé and Moules Frites in a rich bouillabaisse broth. If you’re wondering about the restaurant’s famous French Onion Soup, don’t worry—it’s coming back this winter as a seasonal feature.

Dessert continues the French theme with apple beignets glazed with Sortilège maple whisky liqueur and chocolate mousse served with poached pear. A late-night menu is also expected to debut later in July.

The beverage program has also been refreshed under Gaia House beverage director Dylan Riches. Expect classic French inspiration with a modern twist, including cocktails such as an elderflower pastis, a truffle martini and a bourguignon highball, alongside a curated wine list.

The refreshed restaurant is now welcoming guests during its soft opening, with reservations available online and walk-ins accepted. The official grand reopening celebration takes place on July 8.
