Ludzu And Xie Xie at Gene Debut on March 16

As its name suggests, Ludzu & Xie Xie is one of Vancouver’s unlikeliest culinary partnerships, and this Friday, March 16th, you’re invited to experience the debut of Fei Bing Express, its boldest venture yet.

Fei Bing Express will transform Gene, the iconic Main Street coffee bar, into a Chinese hawker stand.  Occupying the corner of Main & Kingsway, Fei Bing Express is at the nerve-centre of metro Vancouver’s bustling Friday night.  No reservations necessary – the Express is walk-in only. They’ll be serving sumptuous dishes of pork belly or mushroom tofu pancakes (fei bing), five spice yam chips and almond cookie ice cream sandwiches that are priced cheaply, sourced ethically and crafted with the startling invention which has come to characterize the Ludzu & Xie Xie experience.

Alex Dadzis and Ken Tsui have quickly gained notoriety in Vancouver’s fabled underground culinary circuit.  Having begun as a purveyor of homemade sauerkraut, a tribute to his Latvian grandmother, Dadzis has since established himself as one of the city’s premiere experimental bartenders.  His year of brunches at The Dunlevy Snack Bar, ranged from continental to Korean, further asserted Dadzis as one of Vancouver’s most versatile young chefs.  Tsui has likewise emerged as a major young presence in the city’s competitive culinary circuit with his supper project, Eat Together.  His innovative interpretations of traditional cuisine, drawn from locally farmed ingredients so fresh they were harvested that morning, are served in settings of casual warmth and playfulness not usually associated with underground cuisine.

These two ambitious young chefs first collaborated on Fly South, a sold-out supper which welcomed the fall with an autumnal menu featuring home-smoked apple wood duck followed by brandied pears and brown butter rice pudding paired with an apple hot toddy.  Since this resounding debut, Ludzu & Xie Xie has held several secret suppers, ranging from intimate small table experiences to bustling dinner parties, while developing fresh techniques in lucky kitchens across Vancouver.

Fei Bing Express marks Ludzu & Xie Xie’s bold emergence from the underground.  It also marks an evolution in the partnership’s philosophy, a transition from secret supper to dinner party.  Casual, fun, and priced for any wallet, Fei Bing Express seeks to reflect the colourful range of Vancouver’s cuisine and citizenry.
