Cooking with Guiness Beer with Chef Dez

Do you want to do something different for St. Patrick’s Day this year? How about hosting a dinner focused on Irish Food? Come join Chef Dez in this salute to the Irish as we explore Irish cooking with a glass of Guinness beer and Dez’s twist on the following Irish recipes: classic Dublin Coddle (Sausage & Potato Bake), Colcannon (the best cagbbage mashed potatoes you will ever eat) served with a Guinness Cream Reduction, and amazing Irish Soda Bread – an Irish staple for any meal.

Westcoast Seafood with Chef Romy Prasad

March 15   11 am or 7 pm

Living on the west coast you need to have a few recipes you can whip out for company that show off the bounty of our beautiful west coast waters. Tonight Romy will provide you with some excellent ideas….starting with a B.C. Wild Salmon Cake with a Spicy Tarragon Aioli.  Followed by Seared Tuna Salad with Anchovies, Capers, Olives, Crispy Green Beans dressed with a Simple Vinaigrette.  Next up -Grilled Mackerel with Marinated Spicy Zucchini and finally, Steamed B.C. Halibut in an Aqua Pazza Broth with fresh Fennel, Edamame, Potatoes and Saffron.

Taste of Spain with Chef Rebecca Troelstra

Tonight, Chef Becky welcomes us back to Spain for another culinary tour! Savour the flavours of the food Becky grew up loving – she is sharing them with you so you can re-create this menu for your friends and family at home, come and enjoy.  Chef Becky’s dinner menu will include: Roasted Red Pepper Salad, Tortilla Espanola (Spanish tortilla), Caldo Gallego (Galician soup), Almond Orchata (a delicious iced drink made from almonds and spices) and  Baked Apples for dessert – simple and most importantly traditionally delicious.

Even More Fresh Pasta From Stratch with Chef Romy Prasad

Chef Romy’s first fresh pasta class a few weeks ago was a great primer but tonight we will reveal even more tips & tricks for perfect pasta at home every single time.  On the menu tonight Saffron Infused Fettuccini with Pancetta, Wild Mushrooms & Oven Dried Tomatoes.  Ricotta and Fresh Mint Tortellini with a Fresh Tomato Sauce & shaved Parmesan.  Next up, fluffy little pillows of goodness,  Gnocchi in Bolognaise Sauce and for dessert Fried Banana Ravioli, in a Vanilla Custard Sauce.

The 2011 BBQ on the Bypass has been set for Sunday, September 18th in the Well Seasoned parking lot.  This year, we’ll be celebrating our 6th year of bringing the best BBQ cooks to Langley for a great day of delicious barbequed food, entertainment and the thrill of a southern style BBQ competition. We’ll also be bringing back our Great B.C. Bake Off. A call for entries will be announced in the next few months.
