Memphis Goes Whole Hog With A Series of Nose-To-Tail Dinners

Memphis Blues Barbeque House, long known for its love of great food, as well as gastronomic education, is pleased to announce the much-anticipated return of the ‘Meat Me In Memphis’ dinner series.  Starting at 7pm on February 27th at Commercial Drive (Vancouver), and on February 28th at Broadway (Vancouver) and Grandview Corners (Surrey), guests are welcome to enjoy a perfectly-slow roasted, all-you-can-eat Whole Hog dinner.  For only $15.95, each guest is entitled to enjoy as much of the perfectly smoked whole hog as they are able, along with Memphis Slaw, Potato Salad, BBQ Pit Beans, Fries, and their famous cornbread.  Reservations can be made in person, or over the phone.

The Whole Hog:

Since 2001, Memphis Blues has strived to offer food-loving consumers an authentic cultural experience.  Traditional Southern Barbeque is meant to be shared with friends and family, and the restaurant has always embraced the warm spirit of communal dining.  The ‘Meat Me In Memphis’ series of dinners is meant to bring that sincere tradition north of the 49th parallel, and it’s being done in generous family style.

At 7pm each night, a whole slow-smoked hog will be ceremoniously carried out by two strappin’ lads (or ladies, or both), after roasting in the custom Memphis pits for over 8 hours.  At this point, the skin has turned a crisp and gorgeous mahogany, while the meat inside is juicy and incredibly flavourful.  For Memphis Blues’ world-famous pulled pork sandwiches, the front shoulder (aka ‘Boston Butt’) is the section of choice.  It is well-marbled with fat that allows it to cook slowly and perfectly over several hours.  But there’s so much more to enjoy with the whole hog!  The cheeks, for instance, are lean, but incredibly moist. The skin may be rubbed and deep fried to produce crackling – crispy and savoury – and high in oleic acid, the same healthy fat found in olive oil.

The staff of Memphis Blues will be on hand to discuss different sections of the meat, to entertain, to educate, and to share in the communal pleasures of true nose-to-tail dining.
