Join us this evening to celebrate salmon! Executive Chef Wayne Sych of the Cannery Restaurant will guide you through many delicious preparations of salmon. Tonights menu will include:
• Sweet chipotle glazed salmon with charred pineapple salsa
• Salmon kaffir lime cakes with ponzu dipping sauce
• Poached salmon with preserved black bean vinaigrette
• Pumpkin seed crusted salmon with Medetreranian gazpacho
• Seared salmon with steamed clams Provencal

Join us this afternoon in this hands on pie and tart making class. You will learn the how to make a basic pie dough, a basic sweet tart dough and a pressed graham cracker crust base. You will make each dough and use it to make:

Kris will show you how a little preparation can make your dinnertimes a whole lot simpler and tastier! Today Chef Kris will show you how to make:

OCEANWISE WITH KAREN BARNABY – Tuesday, April 20th – 6:00 -9:00pm

The Fish House in Stanley Park is proud to be a member of the Ocean Wise sustainable seafood program. This program was created to help restaurants and their customers make environmentally friendly seafood choices. This evening Executive Chef Karen Barnaby is presenting innovative seafood recipes – Ocean Wise. Today you will enjoy:
• Oyster Motoyaki – succulent oysters baked with wasabi mayonnaise
• Wild Salmon with slow roasted roasted tomatoes, oregano, basil and lemon
• Oven roasted Halibut with Chardonnay and corn butter
• Albacore Tuna “Melt”- fresh tuna is used in this playful take on tuna melt
• Sablefish Broiled in Sake – this treatment richly caramelizes the fish and enhances its buttery smooth texture

Expand on your knowledge and skills on the basics of cooking and take it to the next level! French-born and trained chef Eric Arrouze will help you further your culinary skills, with more advanced techniques and recipes in stocks and sauces, meats, poultry, seafood and desserts.
