Low Carb with Chef Karen Barnaby  

June 13   7:00 pm – $55  

Start the summer off right by watching what you eat. You don’t have to make sacrifices to eat well…tonight Chef Karen raises the bar with Hummus & Parsely Pine Nut Salad followed by Oven “Fried” Chicken with Smokey Chipotle Barbecue Sauce and Cauli-Fried “Rice”. Next a Deep Dish Pizza Quiche and dessert is an amazing Zucchini Cake with Orange Cream Cheese Frosting. Delish!  

Knife Skills with Chef Romy Prasad        

June 16  10:00 am – $99*   

Knife Skills are absolutely essential in the kitchen. In this first class you will receive a Victorinox Santoku Knife and an Epicurean Cutting Board; after all you will need these tools to do a good job, Chef will guide you through the proper techniques of knife use, choosing the right knife for the job, and learning the basics on sharpening, maintenance, care and storage. by the end of the class, all those vegetables you skillfully chopped will end up in a delicious soup for you to enjoy.

Raise the bar at your next dinner party. You will definitely add some of these treasures into your entertaining repertoire…Fresh Oysters on the half shell with Champagne Granita and Caviar, Shrimp & Scallop Cerviche with Avocado, Jicama and Grapefruit Albacore Tuna Tataki served with Sesame Soy Sauce and Mango Relish, Salmon & Halibut Duo Glazed with Sweet Chilli and served with Fresh pea Shoots & Cilantro Mashed Potatoes with Fresh BC clams with Garlic, White Wine, Tomato and Bacon.

Duck is one of those things that seem to intimidate people and something that they don’t prepare often at home. Well, tonight Chef Romy will bring it all into reach with a few great recipes that will make cooking duck at home something you are going to want to do more often! Starting with an appetizer of Duck Confit Pizza with Caramelized Onions, Oven Dried Tomatoes and Goats Cheese. Next, Grilled 5 Spice Duck breast Salad with Organic Greens, Apples & Pomegranate vinaigrette. For a main; Whole Roasted Duck marinated with Lemon Grass, Limes and Chiles, served over steam rice. And for dessert – Duck Egg Cream Carmel.
