The kitchen team at Refuel, Campagnolo and Campagnolo ROMA present “The Dry Age”, an online written and photographed diary of what goes on behind the scenes at these three restaurants. The posts on The Dry Age come straight from the cookers mouths and their hearts. We have chosen not to spotlight the individual contributors in this release as The Dry Age is about a team, that team’s belief in hard work and the beauty of what that hard work produces.

This excerpt from The Dry Age explains what The Dry Age is all about;

Hard work is behind every incredible ingredient we receive from the various growers and suppliers of meat, fish, fruit, and vegetables. When their work is done, and the food reaches our hands, that’s when our hard work begins. We spend a great deal of time and energy being careful not to ruin the food, cooking with restraint and respect for the ingredients until eventually a customer sits down at one of our tables, spending money that they themselves worked hard for. Only good can come from hard work. The Dry Age is about what’s good in our kitchens, which ultimately is what’s good for you.
