Corn in a Cup (Elote en Vaso)

Cheater Version of Mexican Corn. You may not find the traditional ingredients for Elote en Vaso (corn in a cup) if you make a quick run to your local grocery store, as the real ingredients take a little more sleuthing. I’ve therefore improvised so you can still make something delicious, just don’t try to pass it off as authentic.

Ingredients
  

  • 2 cups frozen corn
  • 3 tablespoons sour cream
  • 3 tablespoons mayonnaise
  • ½ cup crumbled feta cheese plus more to top cups
  • 1 red bell pepper diced
  • 2 green onions finely chopped
  • 1 tsp Aleppo or other chili pepper powder plus more for dusting.
  • ½ tsp salt
  • ½ tsp pepper
  • Handful cilantro chopped finely
  • 2 limes juices plus wedges for serving.

Method
 

  1. Cook corn according to package instructions and drain well. You can also get fancy and put some of the corn under the broiler and crisp it up if time permits.
  2. Mix all ingredients in a bowl and spoon into small jars or bowls
  3. Sprinkle with chili pepper and crumbled feta cheese
  4. Serve with a lime wedge.
