Savour Spring at Well Seasoned

The flowers have begun to bloom and the local crops are starting to grow. Spring is officially here and that makes us very excited about all the fresh local produce that will be available soon!

This month many of you will be celebrating Easter, an occasion that brings with it many delicious culinary traditions like baked ham and sweet Easter breads.

If you’re looking for some culinary inspiration, we hope you’ll tune in to see Angie dish out some Easter recipes on April 21st when the crew from Breakfast Television comes to Langley to shoot part of their broadcast live at Well Seasoned! (more details in our “In the News” section below)

With the warmer temperatures here, Spring is also a time to light up the barbeque and we’re planning to made a big announcement soon about an upcoming barbeque class, so stay tuned!

Join us tonight for some perfect pasta, light & fluffy gnocchi and the secret to rich & creamy risotto with Chef Romy….he will feature recipes for Garganelli Pasta with Smoked Chicken, Mushrooms & Goat Cheese.  Next, a bubbly Baked Penne with Spicy Sausage, Eggplant, Smoked Gouda and Red Wine.  Next, hand rolled Gnocchi with Fresh Green Cabbage, Bacon, Mozzarella and a Brown Butter Sauce.  And the grand finale, Fresh Dungeness Crab Risotto with Tarragon, Parmesan Cheese and a Spicy Carrot Reduction. We’ve all had salmon – the good, the bad and the overcooked!  Tonight will satisfy your craving for perfectly cooked Salmon with incredible flavor.  If anyone knows Wild BC Salmon, it’s Chef Karen Barnaby – the Executive Chef at the Fish House in Stanley Park.  On the menu tonight is Salmon with Soy Wasabi Glaze, Salmon Baked in Cornhusks with Corn & Zucchini Sauté, Salmon with Pistachio & Basil Butter, Slow Roasted Salmon with Tomato Confit and finally, Salmon with Romescu Sauce.

Join us tonight for another great evening with Chef Anthony Sedlak.  We will start off with the creamiest Field Mushroom Soup you have ever had! Don’t tell him we told you this but his secret ingredient is white truffle oil! From there, a refreshingly different Insalata Verde with Apple Cider Vinaigrette followed by Chef Anthony’s take on a classic Beef Bourguignon. This class will inspire you to go home and recreate this dishes for your friends and family.

What is your favourite thing to cook?

Italian.  I love to make my own pasta.

Where was the last place you travelled to what was the food highlight from that trip?

I went to Vegas and ate at the Stratasphere. Yum!

What was the last dish that you made that was a disaster?

Turkey pizza when I was in grade 9. It seemed like a good idea at the time.

What is the favourite thing your mom made?

Lemon crepes and Toad in the Hole (It’s an English thing!)

What cookbook are you reading right now?

I’m reading two – The Breakfast Book by Marion Cunningham and Grazing by Julie Van Rosendaal

What is your go-to take out food?

Fish and chips (with a side of mushy peas!)

RECIPE OF THE MONTH

Coconut Pecan Cake

There is something about coconut that makes me think of spring,  I guess maybe it’s the tropical notes that reminds me summer isn’t too far off.  This cake would make a great addition to your Easter brunch, lunch or dinner table.

Cake

1 c Vegetable oil

2 c White sugar

1 c yogurt

1 tsp. baking soda

5 egg yolks

2 c flour

1 tsp. baking powder

1 tsp. vanilla

2 big handfuls shredded coconut

1 c chopped pecans

5 egg whites beaten to stiff peaks

Frosting

270 grams cream cheese

¼ cup butter

300 grams powdered sugar

1 tsp. vanilla paste

1 handful shredded coconut.

½  C. Chopped pecans

1. Pour the oil into a large bowl. Add the remaining ingredients except the egg whites, one at a time, mixing well after each addition. Carefully fold in the egg whites.

2. Butter and flour two round 8″ cake pans. Cover the bottom with wax paper and pour half of the batter into each pan.

3. Bake in a pre-heated 175°C oven for 45 minutes or until a toothpick inserted in the middle comes out clean. Let it cool until warm and remove from pans. Cover with the frosting.

4. Frosting –  Cream together the cream cheese, butter, sugar and vanilla until creamy.

5. Frost the top of one of the cakes then place the second cake on top of the first. Cover both with the remaining frosting.
