This celebration of fine food and wine is intimate in scale and will be held in the bistro’s beautiful new Private Dining Room and Wine Vault. Hosts for the evening are Sommelier Kevin Van Hullebush and Trefethen Family Vineyards owner Janet Trefethen.

WINEMAKER COMMENTS AND TASTING NOTES
TREFETHEN ESTATE CHARDONNAY 2006: Pale gold in colour, with enticing aromas of Golden Delicious apple, clover honey, baking spices, vanilla and light butter scents.
On the palate, the wine is crips and well structured, with flavours of apple pie and lemon curd following a refreshing minerality that persists throughout the wine’s long, clean finish.
100% Estate Chardonnay, Oak Knoll District – 9 months in French Oak.
TREFETHEN ESTATE MERLOT 2005: Often compared to the wines of Pomerol, this Merlot is rich and luscious. A balanced, soft, full body brushes up against smoky red fruit, slightly under-ripe boysenberries, plums, sundried tomatoes, red peppercorns and nutmeg.
Absent of any real green characteristics, it still displays nice acidity and soft tannins.
Will cellar well for at least eight years. 78% Merlot, 18% Cabernet, 3% Malbec, 1% Petit Verdot – 16 months in French and American Oak.
TREFETHEN LATE HARVEST RIESLING 2007: This Late Harvest Riesling is left on the vine to develop botrytis cinerea – the ‘noble rot’, and then harvested a full two months after our Dry Riseling. The juice inside each grape is reduced to a precious golden syrup.
A dessert unto itself, this wine is divine with baked fruit desserts, using peaches, apricot or apples. For a lighter finish, enjoy with fruit and cheese.
100% Riesling, Oak Knoll District. 44 degrees brix, 14 grams/100 ml residual sugar.
One of Napa Valley’s few remaining family wine estates, Trefethen has never purchased a single outside grape. Located in the Oak Knoll District of Napa Valley, Trefethen is nestled in a verdant landscape of vines at the cooler, south end of Napa Valley.
Trefethen farms 63 district vineyard blocks, encompassing nine different grape varietals – Chardonnay, Riseling, Cabernet Sauvignon, Merlot, Pinot Noir, Cabernet Franc, Malbec, Petit Verdot, and Voignier.
