It’s so great to see the signature foods of Spring arriving in the markets. BC spot Prawns debuted this week, rhubarb is up and going strong, first of the season green peas are here and of course fresh BC Halibut is in full swing.  The BBQ smells are wafting from every corner of town, it’s great!

Ask just about anyone what their favourite BBQ meal is and Ribs will be right at the top of the list.  When we think BBQ we think about smoky, sweet, tender BBQ ribs served with traditional fixing like beans, slaw and cornbread.  Well tonight one of Canada’s Top BBQ Cooks Danielle Dimovski puts us through the paces and shares her secrets for award winning ribs.  Baby Backs, Spareribs, St. Louis Style & Short Ribs.  She will share some of her favourite RUB recipes and talk about saucy vs. dry ribs.  This class will change the way you think about and prepare ribs forever…. bring a pen – you are going to want to take plenty of notes.  We supply the napkins but you will need your appetite!

RECIPE OF THE MONTH  
Renee brought in some of her delicious home-grown rhubarb to share with us so I was inspired to transform it into a very quick but very delicious dessert.   

Roasted Rhubarb Fool with Amaretti Crumble  
2 lbs. ripe fresh BC rhubarb cut into 1”peices
½ cup Fraser Valley honey
2 bricks of room temperature full fat cream cheese
½ litre whipping cream
1 tbsp. pure vanilla extract or vanilla paste
18 Amaretti cookies for garnish
Wash and cut your rhubarb into 1” pieces.  Put the rhubarb chunks in a baking pan and drizzle over the honey. Roast uncovered in a 350 degree oven until the rhubarb is soft and the honey has caramelized- about 20-25 minutes. Remove from the oven, stir well to mash up the rhubarb and blend the honey and the juices back into the flesh.  Transfer the roasted rhubarb to a bowl and leave to cool – about 20-30 minutes.  

Soften the cream cheese by mashing it vigorously with a fork. Whip the cream in a bowl with the vanilla – when it is softly whipped add the softened cream cheese and blend to combine.  Using a spatula lightly swirl the cooled roasted rhubarb into the cream cheese mixture.  Spoon the mixture into serving dishes or wine classes.  To serve, crumble over the Amaretti cookies.
