Chef’s Table Society

Spot prawns are all the rage this week, and the Chef’s Table Society did an exceptional job of celebrating virtually with their Spot Prawn Festival.  The videos were dropped ahead of time and then the event included a conversation with the chefs, Angus An, Ken Nakano, Ned Bell, and Stacey Johnson. Ned and Stacey were mid-service at the Naramata Inn, reminding me I need to save up for a tip up there soon! We’re hoping they’ll make the recipe videos public, and will be sharing if so. I’m also dreaming of the day we can all celebrate together again and meet up on the regular, perhaps somewhere like the Culinary Library the CTS has planned. Read more about the plans for the Culinary Library here.

Rose all May prep for Rose Day

In preparation for Rose Wine Day, June 11, we’ve being doing the hard work and sampling through some great local wines and have been having a tough time finding a favourite. They vary from bone dry to sweet, and we’re fans of a variety of styles, depending on our mood and what’s on the table that night. We’ll be breaking down these wines individually in more depth, and if you want to learn more about Rose, check out Good Wine Gal’s blog series, Rose all May, here.

Singletree Rose

Singletree Rose 2020

A blend of Pinot Noir from the Fraser Valley (they’re out in Abbotsford) and Merlot and Cabernet Franc from Naramata. Bright salmon colour, strawberry, cherry, floral and herbaceous on the nose and a red berry, ripe sour cherry tang, and a nice balance of acidity and sweetness on the palate. Really great wine for ribs with a bit of spice as the residual would complement.

Old Bird

Dumplings

Dumplings are life and I’ve been seeing them everywhere, far more of these delightful stuffed bundles of joy are appearing in my feeds, and I love it. I’ll be watching tonight as In My Kitchen shows us a Vietnamese version.  I’m also obsessed with the dumplings and the Chili Oil from Old Bird. You can buy these online at SPUD, where I’ve been working since March, and we will have some video up shortly of this fantastic restaurant and this dumpling creation. We’ve also got the Dumpling Kings superb dumplings too! Spud has been working with restaurants to get their products shelf-ready, doing all the leg work with label creation, ingredient lists, Canadian Health compliance and more. We’ve got products from the Keefer, Dosanko, Kokomo, Chambar, Mile One Easting House, Nuba, Rocky Mountain Flatbread, and Jamjar as well, with more coming down the pipeline! I used to think SPUD was just produce, but we’ve got everything from gardening supplies to make up!
