Wild Pacific Halibut Demo and Lunch

Oh, hello, festivals! One of my favourites is the BC Seafood Festival, featuring Wild Pacific Halibut. I think the first one I attended was in 2010, but it could have been earlier. The last was 2018, one of the biggest festivals with chefs coming from all around the globe. This year you’ll get to meet many wonderful chefs from British Columbia, including Chef Ned Bell of the Naramata Inn, Chef Ronald St. Pierre of Locals, Chef and fellow Les Dame d’Escoffier member Lesley Stav, Chef Quang Dang, and the Culinary Team BC chefs, Chef Tina Tang, Chef Leah Patitucci, Chef Heejo Jung, Chef Aaron Hoffman, Chef Warren Chow, and Chef Chris Braun. Comox and the BC Shellfish Festival Coverage

If Halibut’s your dish, don’t miss the Wild Pacific Halibut Kick-off Lunch and Demo on June 3rd, the Halibut Masterclass, halibut on the menu at the Gala Dinner and halibut sales at the dock by fishermen Wes Erikson and Cheri Hansen.

Wild Pacific Halibut Kick-off Lunch and Demo 11:30 a.m. Friday, June 3rd.

Hot off the docks… the Wild About Halibut Demo & Lunch featuring Wild Pacific Halibut Ceviche, West Coast Halibut with Tomato Saffron Broth, Panko Halibut with basil Aioli and a Berry Coulis and a Dessert.

Watch the chefs from North Island College, led by Chef Xavier (The Bistro) and chefs from the North Vancouver Island Chefs Assn. including Ronald St. Pierre (Locals Restaurant), Chef Lesley Stav, and Cheri Hansen (a real Halibut fisher) demonstrate how to break down a 50-pound halibut and demonstrate the variety of delectable dishes that will be served as your lunch. And you’ll be provided with the recipes to create these dishes at home. Now that’s a flat-out fantastic way to kick off this year’s Seafood Festival! $85 Tickets
