Broccoli Gets Elevated With Fresh Mayo and BACON!
Recent trips to the farmers market had me overindulging in all the fresh produce, and recently I had some broccoli that was calling out to be dressed up and served, so I decided to make this broccoli and bacon salad, as I also had bacon on hand. I’ve discovered One Arrow Meats artisan bacon and we just can’t get enough of this tasty treat. You can purchase it at the farmers markets, at Les Amis Du Fromage and through SPUD. The other brand I used here was Maison Orphee as I’ve been really enjoying their fresh mayonnaise and they’re made in Canada too!
Broccoli and Bacon Salad
Ingredients
3 heads broccoli, cut into bite-size pieces
3/4 cup shredded aged Cheddar cheese
1/s red onion finely diced
1/2 c. toasted sliced almonds
4 slices bacon diced and fried
2 tbsp. freshly chopped green onions
1/2 cup dried apricots diced
Dressing
2/3 c. mayo – I used the fresh mayo from Maison Orphee
3 tbsp. apple cider vinegar – I used the raspberry tarragon from Maison Orphee
1 tbsp. dijon mustard – I used Maison Orphee
Salt and fresh ground black pepper
Directions
Bring 6 cups of salted water to a boil and prepare a large bowl with iced water.
Add broccoli to the boiling water and cook 2-3 minutes. Remove with a slotted spoon and place in the prepared bowl of ice water. Cool and drain.
Whisk all to combine dressing ingredients. Season to taste with salt and pepper.
Combine all salad ingredients in a large bowl and pour over dressing. Toss until ingredients are combined and fully coated in dressing. Refrigerate until ready to serve.
I can’t wait to try this salad. I have been a big fan of Maison Orphee for a long time now, thoroughy enjoy their products. And, yes, love the fact that they are Canadian.
