This weekend eleven of Canada’s top chefs will head to Kelowna to compete in the Canadian Culinary Championships. We’re learning a little bit about them before they compete and here’s our answers from PEI/New Brunswick’s representing chef, Chef Irwin MacKinnon from Papa Joe’s.

Tell us a little bit about your restaurant.

Papa Joe’s is one of if not the busiest restaurants in Charlottetown. We serve a very eclectic style menu with Mediterranean, Indian, Classical and comfort foods with flare in a casual but upscale atmosphere.

Where do you eat in your city?

I like Sim’s Corner or Pilot House during the winter months and try as many seasonal spots as possible through the summer.

What would be your ideal food day?

I love to eat as much as I do cooking, ideal for me would be a roving feast stopping a many spots, trying some apps and good wine then moving on to another.

What ingredient do you always have on hand?

Mustard, Grainy, Dijon or flavoured but gotta have mustard

What’s your go-to recipe when you’re eating at home? 

I love to Bar B Q when I am at home, usually Island beef.

What cookbook are you most interested in lately?

I must admit, I never look at many cookbooks, but ironically would like to publish one!!

Any hints on what dish you will be preparing for the Culinary Championships?

I am bringing the East Coast with me!

What beverage are you pairing with?

I am using an American IPA called Go Devil, made here in Charlottetown by UpStreet Craft Brewery.

Who is coming with you?

I have two of my staff and two owners coming to Kelowna, as well I have a couple of friends coming in from Alberta.

What, outside the competition itself, are you looking forward to experiencing in Kelowna?

I am looking forward to enjoying local West coast inspired food and of course Okanagan wine.
