This weekend eleven of Canada’s top chefs will head to Kelowna to compete in the Canadian Culinary Championships. We’re learning a little bit about them before they compete and here’s our answers from Newfoundland’s representing chef, Chef Katie Hayes from Bonavista Social Club.

Tell us a little bit about your restaurant.

Located in Eastern NL, in a town of 30 people, surrounded by gardens and animals that we serve. Located on the Ocean.

Where do you eat in your city?

No restaurants in Upper Amherst Cove but my night out is to my parents house, Mom cooks!

What would be your ideal food day?

Cooking with all my friends! Sharing and tasting and laughing.

What ingredient do you always have on hand?

Butter.

What’s your go-to recipe when you’re eating at home?

Flour tortillas, poached eggs with hollandaise and lamb stew.

What cookbook are you most interested in lately?

The Joy of Cooking right now.

Any hints on what dish you will be preparing for the Culinary Championships?

There will be some Wild Moose, and we have incorporated our own veggies and flavours

What beverage are you pairing with?

Tawse 2015 Grower’s Blend Cabernet Franc, Niagara, ON

Who is coming with you?

My husband, Shane, 2 of my chefs Kaitlyn Oldford and Duane Chatman. And 3 of the best, Roger Dewling, Carolyn Power and Stephen Lee
