MID SEPTEMBER HIGHLIGHTS

LIGHTER FRENCH FARE – PARTICIPATION –Wednesday, September 8th – 6:00 – 9:00pm

Chef Robert will transform classic French dishes traditionally laden with lots of heavy cream and butter into lighter, equally as tasty French fare! Learn tips on how to minimize calories and maximize taste.Alongside Chef Robert you will make:

·  Braised chicken breast with red wine & shallot reduction

·  Navarin Printaniere – slow baked spring lamb stew

·  Wild Salmon en Papillote with lemon herb sauce

·  Fennel, tomato, and parmesan gratin

·  Peach Melba with frozen yogurt and raspberry coulis

SPANISH – PARTICIPATION – Monday, September 13th– 6:00 – 9:00pm

Today Executive Chef Romy Prasad will show you how to create an excellent Spanish meal. Enjoy some delicious Spanish fare as you sip a glass of wine and learn to make:

·  Roasted tomato soup with thyme, garlic & extra virgin olive oil

·  Spicy flank steak with seasonal vegetables

·  Asparagus & Shrimp risotto

·  Classic Spanish paella with saffron, chorizo and seasonal fish & shellfish

·  Poached pears in red wine served with chocolate sauce

Fish expert and Executive Chef Karen Barnaby features a seafood menu of prawn & scallop creations. Learn how to select prawns & scallops and prepare them to perfection!

FUNDAMENTALS OF COOKING LEVEL 1 – PARTICIPATION

There is still space available in this popular series!
A good grasp of the basics of cooking will not only give you the ability to apply the technique, you will also learn the standards of quality. French-born and trained chef Eric Arrouze will lead you into the classics. The classes will cover, knife skills,vegetable cuts, sauces, stocks, meats, vegetables, seafood, desserts and more in these full hands-on workshops. Gain confidence to cook like a chef in your own kitchen!

Saturdays in September and October from 10am – 1pm

WILTON CAKE DECORATING SERIES – PARTICIPATION

Learn the Wilton Method of cake decorating — from initial concepts and techniques of simple borders and drop flowers to elaborate floral designs and finishes, then on to fondants, lace and embroidery and tiered cakes. Class participants pay no tax on most purchases in the store, including Wilton products! Fee includes course books and student cake decorating kits
