ON CIBO’S RUSTIC ITALIAN MENU FROM MAY 16 – 28

Cibo’s seasonally driven menu with its definitive focus on local, organic and sustainable ingredients is embracing BC’s favourite crustacean in a variety of dishes guaranteed to astound you with Executive Chef Neil Taylor’s innovative approach to spot prawns.  “I think they are B.C.’s best seafood and worth the wait and relatively short season, says Taylor.  For the next two weeks our menu will feature spot prawns in each section – Antipasti, Primi and Secondi.  The actual dishes will change daily to reflect what will seasonally complement the prawns and will include some of my all-time favourites,” continued Neil.

Examples of typical dishes you may find on Cibo’s daily fresh menu include:

Split, then roasted prawns with fennel seeds, wild oregano and chili

Poached prawns with aioli and lemon

Spot prawns Marsala housewife style (cooked with tomato, pine nuts, raisins, chili and Marsala)

Spot prawn Carpaccio – chili, marjoram, lemon, new season’s extra virgin olive oil

Roasted spot prawns, butter, roman brandy, lemon, parsley and black pepper

Frito misto of spot prawns, asparagus and artichokes, aioli and lemon

Risotto of spot prawns, peas and basil

Fresh spaghetti with spot prawns, San Marzano tomatoes, chili, basil and new season’s e.v.o. oil

Orrichette Nero with spot prawns, pancetta, garlic, lemon, oregano and butter

Fish stew with spot prawns, clams, mussels, rock cod, tomato, saffron and bruschetta
