Week of Oaxacan Cuisine in Vancouver

WEEK OF OAXACAN CUISINE
September 7th-16th

On December 2010, UNESCO declared Traditional Mexican Cuisine as Intangible Cultural Heritage of Humanity. This was the first time in the world that cuisine has been acknowledged in such a manner by the UNESCO, and this recognition has only been shared between Mexico and France.

Given this recognition, Mexico Fest 2011 honours our traditions during the month of September when we celebrate our Independence with the exquisite and sophisticated cuisine from the Magical State of Oaxaca.

For ten days in September, nine restaurants in the Vancouver and Lower Mainland area will celebrate the cuisine of the Mexican state of Oaxaca. Special dishes that feature the traditional taste of the state are included in their menus so Vancouverites can sample the unique and rich flavours of this incredible region of Mexico.

Known as the “Land of the Seven Moles,” Oaxaca is blessed with an abundance of vegetables grown in the central valley; fish and shellfish from the southern coast and Isthmus regions; and a year-round supply of tropical fruit from the lush area bordering Veracruz.

Among many, one of the most distinctive ingredients used to flavour beans and other regional specialities is the pasilla oaxaqueña chile, with its hot, smoky taste and deep red color. Amarillos, chilhuacles, chilcostles and costeños are other Oaxacan chiles used in moles and sauces.

During the gastronomic week, you would be able to enjoy the following dishes:

· Lentils with fruit (Lentejas con Fruta)

· Chicken with Mountain Herbs (Pollo a las Hierbas de la Sierra)

· Sloppy Chicken (Manchamanteles)

· Oaxacan Meatballs (Albondigas)

· Light Red Mole (Mole coloradito)

· Deviled Sauce (Salsa Endiablada)
