Botanist Brings Día de los Muertos to Vancouver with a Six-Course Dinner and Mexico City Cocktails
Botanist at Fairmont Pacific Rim is bringing chefs and cocktail talent together from Vancouver and Mexico City for its fifth annual Día de los Muertos celebration. On Sunday, November 1, 2026, the restaurant will host a one-night-only six-course dinner, followed by a cocktail pop-up at the hotel’s Lobby Lounge & RawBar on Monday, November 2.
Three chefs collaborate for a six-course dinner
Executive chef Amanda Healey will be joined by former Botanist executive chef Hector Laguna and María Ponce, chef of Vancouver’s Chupito and La Taqueria. Together, they’ll create a Mexican-inspired tasting menu featuring ingredients foraged and fished in British Columbia, including sablefish and wagyu.

For Healey, the evening is a chance to honour the memories and traditions at the heart of Día de los Muertos, a Mexican holiday that remembers loved ones who have died. She’ll be cooking alongside Laguna, who previously led Botanist’s kitchen, and Ponce, whose cooking brings the traditions of Sonora together with British Columbia ingredients.

Cocktails from Vancouver and Mexico City
Each of the six courses will be paired with cocktails from Botanist Bar, Chupito and Mexico City’s Form + Matter. The bartenders taking part include Botanist’s Justin Powell, Chupito’s Tadia Rosen and Form + Matter’s José Olivas.
Located in Mexico City’s Roma Norte neighbourhood, Form + Matter was founded by Olivas, David Rocha and Po Tsai. Its inventive cocktail program and glass-walled laboratory have drawn international attention. The bar is ranked No. 13 on North America’s 50 Best Bars list and No. 59 on the World’s 50 Best Bars list, according to the event announcement.

November 2 cocktail pop-up
The celebration continues on Monday, November 2, when Chupito and Form + Matter join the team at The Lobby Lounge & RawBar for a one-night-only bar pop-up with themed live music and entertainment. Reservations are recommended, although walk-ins are welcome.
