Chef Michael Stadtlander

Eigensinn Farm, Singhampton, ON

Eighteen years ago, renowed chef Michael Stadtlander and his family bought a farm and started cooking dinner for a maximum of 12 guests at a time.  Today the place has a global reputation, offering the epitome of local, seasonal gastronomy that’s uniquely channed through the chef’s whimsical but sophisticated imagination.  The eight-course dinner, served with gracious warmth and expertise by Stadtlander’s wife and apprentices, changes accordingly to the ingredients available from the farm.  More recently, Chef Stadtlander hosted 500 of Canada’s finest chefs on their farm to create another first; the Canadian Chefs’ Congress.  This is a biennual event with the mission to connect chefs to the land in solidarity with farmers, fishers, gardeners and foragers.  For him, each food moment – the growing, preparation and cooking is an execution in creativity.

Chef Paul Harber

Ravine Vineyard Estate Winery, St. Davids, ON

Chef de Cuisine, is a professionally trained chef, graduated in the top of his class from the prestigious Culinary Institute of America in 2005.  As a result of his stellar standing, his first industry position was reowned New York chef / restaurateur, Daniel Boulud.  Subsequently, Chef Harber was selcted by Chef Andrew Carmelini for the opening of his anxiously anticipated “A Voice” Restaurant in downtown Manhattan.  Chef Harber has also worked beside legendary Chef Michael Stadtlander.
